Sakaya - Kamo Kinshu, Junmai DaiGinjo 35
Hiroshima is the biggest historical centre of sake production in western Japan. Kanemitsu Shuzo specialises in handcrafted premium sake making, using only locally cultivated high-quality sake specific rice.
Rice: Yamada Nishiki
Rice Polishing Ratio: 35%
Bottle Size: 72cl
Tasting Notes: Made using top grade Yamadanishiki rice from a special region in Akitsu village of Hyogo Prefecture. This sake has aromas of white peach and fig leaf, together with a floral impression reminiscent of tree peonies. There is a completely smooth mouthfeel with medium body and a dry finish. The sinewy structure lingers, but a touch of effervescence makes the finish dry and refreshing.
Pairings: Excellent as an aperitif, yet works perfectly with seared wagyu beef tataki , otoro fatty tuna sushi/sashimi or sea urchin.
