Tasting Notes: Made using top grade Yamadanishiki rice from a special region in Akitsu village of Hyogo Prefecture. This sake has aromas of white peach and fig leaf, together with a floral impression reminiscent of tree peonies. There is a completely smooth mouthfeel with medium body and a dry finish. The sinewy structure lingers, but a touch of effervescence makes the finish dry and refreshing.
Pairings: Excellent as an aperitif, yet works perfectly with seared wagyu beef tataki , otoro fatty tuna sushi/sashimi or sea urchin.
